WOW. SO, WHAT all happened last week? Well, former vice president and presidential hopeful Joe Biden can't seem toget out of his own way, and people are starting to wonder if smartphones give you horns. So there's that. Also, Roy Moore, is inexplicably back in politics. Meanwhile, Slack went public; Radiohead's Thom Yorke is making musicals now; the Senate surprisingly voted to block President Trump's attempts to sell arms to Saudi Arabia; the US team is still dominating the Women's World Cup; and the NBA Draft happened. Really, it's been quite the week. While You Were Offline is here to catch you up on the rest.

Semantic Disputes

What Happened: There are detention centers inside the US for immigrants the current administration has deemed unwanted, but apparently calling them concentration camps publicly upsets a lot of people, even though experts on concentration camps stand behind the usage of the term.
What Really Happened: That the US treatment of immigrants has become increasingly inhumane over the past few years is, sadly, no surprise. On Monday, President Trump announced a new plan of mass arrests by ICE, and there are currently large detention centers of immigrants along the border, wheremultiple detainees have died. If that sounds like a concentration camp to you, you're not alone; one historian, who literally wrote the book on the history of concentration camps, agrees, and her agreement is where our story starts. It was, after all, noticed by congresswoman Alexandria Ocasio-Cortez,

Ingredients

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1-1/2 cups 4% cottage cheese
  • 1-1/4 cups shredded Swiss cheese

Directions

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish.
  • Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

  • Create a pretty burst of color and fresh flavor by adding a pinch of minced herbs to the egg mixture. Thyme and parsley are perfect candidates; try 1 teaspoon fresh or 1/4 teaspoon dried.
  • Cottage cheese is surprisingly versatile and almost disappears into this dish when baked.
  • Assemble a day in advance, and bake just before serving.

    Ingredients

    • 2 cups all-purpose flour
    • 3/4 cup sugar
    • 3-1/2 teaspoons baking powder
    • 2 large eggs, separated
    • 1-1/2 cups whole milk
    • 1 cup butter, melted
    • 1 teaspoon vanilla extract
    • Sliced fresh strawberries or syrup

    Directions

    • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter.
    • Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

  • For best results, lightly grease your waffle maker before pouring in the batter.
  • Stiff peaks are achieved when the whites stand up in points, rather than curling over. If you tilt the bowl, the whites shouldn’t move.

    Ingredients

    • 12 slices day-old white bread, crusts removed
    • 2 packages (8 ounces each) cream cheese
    • 1 cup fresh or frozen blueberries
    • 12 large eggs, lightly beaten
    • 2 cups 2% milk
    • 1/3 cup maple syrup or honey
    • SAUCE:
    • 1 cup sugar
    • 1 cup water
    • 2 tablespoons cornstarch
    • 1 cup fresh or frozen blueberries
    • 1 tablespoon butter

    Directions

    • Cut bread into 1-in. cubes; place half in a greased 13x9-in. baking dish. Cut cream cheese into 1-in. cubes; place over bread. Top with blueberries and remaining bread cubes.
    • Whisk the eggs, milk and syrup in a large bowl. Pour over bread mixture. Cover and refrigerate for 8 hours or overnight.
    • Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 30 minutes. Uncover; bake 25-30 minutes longer or until a knife inserted in center comes out clean.
    • Combine the sugar, water and cornstarch until smooth in a small saucepan. Bring to a boil over medium heat; cook and stir until thickened, 3 minutes. Stir in blueberries; bring to a boil. Reduce heat and simmer until berries burst, 8-10 minutes. Remove from heat; stir in butter. Serve with French toast.

    If using frozen blueberries, use without thawing to avoid discoloring the batter.

    Celebrate Negroni Week With These Recipes

    For some, every week is Negroni Week, but this time, it's official.
    June 24 - 30 marks the official 2019 Negroni Week, which is held each year to toast to one of the world's favorite drinks, and raise money for charity. This year, over 12,000 bars around the world have Negroni Week specials, and nearly as many Negroni variations.
    The Negroni, which officially turns 100 this year, is one of the bar world's most popular drinks, in part because of the recipe's adaptability and its sophisticated bittersweet notes.
    The traditional recipe (equal parts Campari, gin and sweet vermouth) couldn't be easier to make, but it also lends itself to nearly endless riffs.
    Here are some variations on the classic drink, to get you through until 2020's Negroni festivities.


    New York's Dante is one of the undisputed Negroni destinations, and features an ever-changing roster of Negroni variations. During Negroni Week, sales double at the West Village bar, averaging over 200 drinks Negroni variationssold per day.

    If you want to bring home of that Dante magic, try your hand at the Chocolate Negroni. Combine Ford's Gin with Punt e Mes sweet vermouth, Campari, a swirl of creme de cacao and a few dashes of chocolate bitters in a rocks glass with a large ice cube, and stir until cold. Garnish with an orange wedge.
    The Negroni Sbagliato. 
    The Sbagliato, which translates as "mistaken," is a popular variation on the Negroni, where one of the ingredients is substituted out for bubbles.
    At Valerie in New York, the Sbagliato switches out the traditional gin for Prosecco, producing a fizzy, bittersweet concoction. Comprised of equal parts Campari, sweet vermouth and Prosecco, and built in a glass, it couldn't be easier to make at home.


    "While Sbagliato is translated as 'mistaken' there’s nothing wrong with this Negroni variation," Spencer Elliott at the Mondrian Terrace says. "Using sparkling rosé for Prosecco and an age old Martini & Rossi bitter, this is the best mistake you’ll make all day. "
    Making this drink is almost as easy as drinking it. Mix one ounce each of Martini & Rossi bitter red vermouth with sweet vermouth in a wine glass, then top with sparkling rosé wine. Garnish orange oil and a fresh orange wedge.


    While the Negroni is recognizable by its ruby red hue, one popular variation strips out the color, in order to play up the more floral notes in the drink.
    The White Negroni, or Negroni Bianco, is a light, summer-ready drink that puts gin at the forefront. In this recipe by Barr Hill gin, Campari and sweet vermouth are replaced with white vermouth and Suze, a slightly bitter, floral aperitif. A spritz of fresh lemon oil and a twist pulls everything together

    Steps


    1. Place 2 lb. baby Yukon Gold potatoes in a large pot, cover with 3 qt. water, then 1 cup kosher salt, and bring to a boil over medium-high heat. (Yes, this is a lot of salt, but it’s the right amount for the job. Potatoes are big and dense—so it takes highly concentrated water to ensure they're seasoned through and through, Plus, think about how much of that gets left behind in the water you pour out!) Once water comes to a boil, reduce heat, adjusting as needed to maintain a simmer, and cook potatoes until fork-tender, 15–20 minutes.
    2. 2. Meanwhile, make your dressing. Combine ¾ cup sour cream, ¼ cup mayonnaise, 1 Tbsp. onion powder, 2 tsp. Dijon mustard, and 1 tsp. black pepper in a large bowl. Finely grate 1 garlic clove into dressing and stir to combine. Thinly slice 1 bunch chives. Transfer half of chives to dressing; set remaining aside for serving. Slice ¼ small red onion as thinly as possible through root end. (This might not be the way you usually cut an onion, but we're going for shallow arcs rather than chunky quarter-moons.) Transfer to a fine-mesh sieve and rinse for several seconds (this eliminates some of that astringent raw onion flavor). Pat dry with paper towels. Add half of onion to bowl with dressing; reserve remaining onion for serving.
    3. 3. When potatoes are tender, scoop out ½ cup potato cooking liquid—we're going to use this later to thicken the sauce, warm up the cold dairy, and flavor the potatoes. Drain potatoes in a colander and let cool 10 minutes or until cool enough to handle. Crush each potato slightly with your hands (it's easiest to do this if you transfer them to a baking sheet or big plate first) and add to bowl with dressing.

    4. 4Toss potatoes with dressing and ¼ cup potato cooking liquid. You want to do this while the potatoes are still warm so that they'll better absorb all of the seasoning. Don't worry if the dressing looks a little loose and watery at the beginning—it will all get absorbed and be nice and creamy. Taste and add more salt or, if your dressing looks too thick, a splash of potato cooking liquid
    5. 5. Top potatoes with reserved chives and onion. Crumble ½ cup sour cream and onion potato chips over—in big pieces if you really just want to be eating a bag of chips or in small pieces if you'd like more of a bread crumb effect.

        ELECTION 2020: Just What The Democrats Need, Another Candidate Enters  Race For President

        Joe Sestak, a former Navy admiral and congressman from Pennsylvania, has joined the crowded field of Democratic candidates running for president in 2020.

        With an announcement on his website, Sestak became the 25th Democratic candidate running for president.
        “I wore the cloth of the nation for over 31 years in peace and war, from the Vietnam and Cold War eras, to Afghanistan and Iraq, and the emergence of China,” Sestak said.
        His announcement came later than those of the other Democratic candidates.
        He said the delay was because he had wanted to spend time with his daughter, who had been battling brain cancer but had since beaten it.
        Sestak, 67, a native of Pennsylvania, was elected to Congress in 2006, defeating a 10-term incumbent.
        He served in the military from 1974 to 2005, finishing as a three-star Navy admiral.
        He commanded an aircraft carrier battle group that conducted combat operations in Afghanistan and Iraq; served as President Clinton’s director for defense policy on the National Security Council in the White House; and served as the deputy chief of naval operations for warfare requirements.
        Sestak, who had a reputation as a hard-charging and demanding taskmaster, positioned himself in his announcement as a supporter of working-class Americans.
        He said that during his time in Congress, his office had fought to overturn denials of treatment by health insurance companies and to save more than 800 homes from foreclosure, as well as to help veterans.
        In describing his platform, he said, “Our country desperately needs a president with a depth of global experience and an understanding of all the elements of our nation’s power, from our economy and our diplomacy to the power of our ideals and our military, including its limitations.”
        Referring to President Trump, Sestak said: “The president is not the problem. He is the symptom of the problem people see in a system that is not fair and accountable to the people.”
        Sestak is no stranger to long-shot political bids.
        He mounted an improbable victory in the 2010 Democratic primary to gain the party’s nomination to run for a United States Senate seat in Pennsylvania.
        That quixotic yearlong quest to win the Democratic Senate nomination pitted Sestak against an array of Democratic power brokers, from the White House to the governor to organized labor to the party apparatus to Democratic donors.
        Sestak defeated Senator Arlen Specter, who had served in the Senate for nearly three decades as a Republican but who, in a political bombshell, announced he was switching to the Democratic Party because he could not win re-election in a Republican primary.
        Sestak lost in the general election to Republican Patrick Toomey.
        He will not participate in the first Democratic debates scheduled this week.
